Cultivating, cooking and eating are man's primary practices and when they manage to be put together they become a way of life to be rediscovered. For our grandparents who lived in the countryside it was part of everyday life but for us city animals is not such an obvious association. Someone may be skeptical but abandoning for a moment the idea of ​​having to go to the supermarket to buy food to cook, you can let go of the imagination to use the small corners from home to cultivate what we can eat.

Tasty and quick summer lunch?

An excellent cold pasta always puts everyone in agreement!

Exit to your balcony and collect:

450 grams of tomatoes, remember that on the potted balcony they are very easy to cultivate, you can choose datterini, small and very sweet, suitable for many recipes.

2 sprigs of rosemary

20 basil leaves

3 sprigs of thyme

10 marjoram leaves

Apart prepare:

300 gr of pasta, preferably whole

Salt, pepper and EVO oil

Dip the tomatoes in boiling water for a few seconds, then deprive them of the covering skin and cut them into small cubes. Collect them in a bowl and add a generous pinch of aromatic mixture that you have previously prepared by chopping a knife with the herbs you have collected. Add salt and pepper and complete with 4 tablespoons of oil. Cover your pesto with plastic wrap and let it rest in a cool place for a couple of hours.

When ready to serve, cook the pasta, drain it al dente and then cool it under running water. Collect the well-drained pasta in a bowl and season with the tomato marinade, some green olives and if you want a sprinkling of pecorino.
